So here’s my recipe for Oatmeal Cookies.
I like to bake these with the kids, on a miserable rainy day when boredom sets in. They are super easy to make and not much mess.
My kids like to add some chocolate spread on top just because😉
I hope you enjoy making and devouring them a much as we do.
Makes 32 Cookies
Ingredients
180g brown sugar
180g unsweetened apple sauce or just make your own stewed apple
1 large egg white – beaten
2 tbsp Oil
1 tbsp vanilla extract
120g oats
140g plain flour – sifted
80g wholewheat flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
You can also add in any other ingredients like chocolate chips or raisins etc just need to account for them with the calories.
Preheat the oven 180 degrees celsius or if Fan oven 160 degrees celsius. Line two or three baking trays with parchment.
Mix all dry ingredients together in a bowel
Mix all wet ingredients together in a separate bowel.
Once both bowels are mixed well, mix the wet into the dry ingredients – use a metal spoon (this takes a few mins).
Divide the mixture into two halves, then make 16 tea spoon full from each half shape into Cookies on baking trays leaving some space between them.
Pop into oven for 15 mins.
Remove and allow to cool on wire rack.
Store in an airtight container to last a few days, or perfect for sharing with your friends and family.
