16 Nov Recipe – Banana Bread
Protein Banana Bread 🍌🍞
(I don’t always add in the protein powder and also chopped mixed nuts are a nice option)
Ingredients
4 ripe banana
4 eggs
1 tbsp of cinnamon
1 tsp baking powder, bicarbonate of soda & vanilla essence
1 pinch of salt
40g coconut flour
40g ground almonds
1 large scoop whey protein powder
Chopped nuts optional
3 tbsp coconut oil
1 tbsp nut butter
Preheat oven 200 or fan 180
Line a loaf tin or muffin tray
Blend or mash the banana, mix in the eggs & vanilla essence.
Gently heat the coconut oil and nut butter to melt leave cool while you prepare the dry ingredients.
Weigh out the dry ingredients and mix in a bowl. Once this is done add the oil and nut butter to the banana mixture mix well then slowly add to the dry ingredients. I like to do this with a metal spoon ensuring completely mixed before pouring into your loaf tin or muffin tray.
As ovens vary I find you will know how your oven bakes my old oven used to take 50 mins however my new oven is 40 mins I would guild from 35-50 mins your looking for a little rise and a nice golden dark brown colour as the mixture is dark.
25 mins if your making muffins.
Cake tester stick is great once it’s clear you should be good to go.
The bread itself should be very moist and is great with butter or on its own.
